XXL Cake Batter Chocolate Chip Cookie

Here in the far reaches of the British commonwealth we are super excited about Kate and William’s new baby…at least I am! I kept checking the BBC and CNN yesterday for all the latest news and details about the new royal baby, and am still waiting to see what his name will be. I have to say I was a little disappointed that it wasn’t a girl, since they’ve changed the succession rule so that girls can be heirs to the throne now too. Oh well, I’m happy the baby is healthy, and we can all rest assured that if Kate had lived 200 years ago she would have done her job!

In honour of the new addition to the royal family, I decided to make one gigantic cookie with sprinkles, because nothing says celebration like sprinkles do. I also added some cake mix to the cookie to give it a cake batter flavour, because seriously, we all know anything cake batter is AMAZING.

This recipe will produce one gigantic cookie that you can share (or not) with your friends, or about four smaller cookies. Gigantic cookies taste better though (in my opinion).

The dough is a standard chocolate chip cookie dough scaled down quite a bit, with the addition of a boxed cake mix as a substitute for a portion of the flour. You can use either white or yellow mix. I also used coconut oil instead of butter, but butter would definitely work here too. I think that the addition of cake mix gives the cookie a chewy quality that you just can’t get by using all flour, and the butter or coconut oil both leaves the cookie with nice crispy edges.

Sprinkles and chocolate chips round everything off for the perfect celebration cookie, whether your celebrating the royal baby or just Tuesday!

XXL Cake Batter Chocolate Chip Cookie

2 Tbsp coconut oil (or butter)

2 Tbsp granulated sugar

2 Tbsp brown sugar

2 Tbsp egg (Beat a whole egg in a small bowl with a fork and then measure out 2 Tbsp)

1/4 tsp vanilla

4 Tbsp all-purpose flour

2 Tbsp boxed cake mix

1/4 tsp baking soda

Pinch of salt

1 Tbsp sprinkles

2 Tbsp chocolate chips.

Directions:

Preheat oven to 350 degrees F.

In a small bowl, cream together the butter and sugar. Add the egg and vanilla and beat well until light and fluffy. Stir in the flour, cake mix, baking soda and salt and mix until well combined. Gently mix in your sprinkles and chocolate chips.

Place on a cookie sheet and slightly press down with your hand. Place in preheated oven, and bake for 14-16 minutes, or until edges of cookie turn golden brown.

Let cool completely on cookie sheet (if you can wait that long!).
