Do you ever have days where all you’d like to do is live in your fridge? Not because of the food (although that can’t be bad), but because of the temperature? Today was one of those days.
Why is it so hot outside?!!! It’s supposed to September, and fall, and therefore it should be crisp and cool. Obviously, the only cure to this unseasonal hot weather is to turn on the oven.Yep, that’s right, I baked today… some fabulous banana muffins.
I got the recipe from the recipe index I talked about in my first post, but this recipe came from my grandmother although I made some adaptations.
Start by mashing up your bananas.
Banana Muffins with Brown Sugar Cinnamon Drizzle
1/2 cup vegetable oil
1 cup sugar
2 large eggs
3 large or 4 small bananas, mashed
1 Tbsp milk (I added this although I’m not really sure it needed it)
1/2 tsp vanilla
1 cup all-purpose
1 cup whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/4 cup mini chocolate chips (regular would work well too)
1/3 cup packed brown sugar
1/2 tsp cinnamon
4 tsp water
Preheat oven to 350 F and grease a muffin tin.
In a lare bowl beat together oil and sugar. Add your eggs and mashed bananas and beat well. Mix in vanilla (and milk if using). In a separate bowl, whisk together flour, baking soda, baking powder, salt, and chocolate chips. Slowly stir in dry ingredients into wet ingredients until just combined. Pour into prepared muffin tin.
In a small bowl, mix together brown sugar, cinnamon, and water and drizzle over muffin batter.
Bake for 20 minutes, or until a toothpick inserted comes out clean.
Drizzle with more brown sugar and cinnamon, if you have any left, as soon as they come out of the oven!
